Good morning, Sherman Harris, members of the rules committee, thank you for the opportunity to speak today. My name is Patrick Doran. Speaking on behalf of the hospitality Business Association Chicago, a trade group for Chicago's locally, owned bars restaurants and music venues the committee briefly today in regards to the tip credit. Minimum wage ordinance, Bill be referred, it's important legislation and I look forward to sharing some on you tell analysis when it's hurting committee. However, I'm speaking today specifically to the co-sponsors and asking them for a few simple accommodation, to have next week's city. Council meeting to ease with likely burden of passage of this ordinance, when it passes later this year, traditional to Traditional Tavern licensees in Chicago. If he can you decline and number employment, since covid went through, which was an enormously challenging time for them personally, half of them never received major federal aid. That is Mabel them to hang on and we've lost more places since that, although sales numbers and sales tax collections have been touted, we are still below 2019, at least through July of this year. Once you adjust for inflation, people are not selling. Buying more products are visiting. A neighborhood place is more prices are just gone out to dinner place in which has been a problem across the economy. And later, this winter will be further stress from any of these locally owned bars, music venues and craft breweries when second and selling a property tax bills, clothes arrive in the mail and need to be paid before the end of the year. Do you? Few simple things that could be done before. Passage, that could help these businesses, whether the higher class expenses and challenges ahead, Would. Would be one. My name is Natasha Kyros, I'm a national league organizer with one Fair wage and I've been a temp worker here in Chicago for over 15 years, making a sub-minimum wage from 222 Administration and I just want to urge the committee to vote this out of the committee today ordinance. So it can pass the time is now for us to pass one Fairway. This is a very historical moment, tipped wages has been held back through the two administrations. Like I said that I've been up here fighting for tipped workers and as as myself to as its Health worker. So I just want to thank the committee for bringing it this far and to vote it out because this is a very urgent matter that we need to take care of it. Should have been taken care of, when we Did Minnie. Did minimum wage raising, minimum wage in 2018, but two workers was left out and so we don't want to leave tipped workers out as inflation and everything is going up for tipped workers as well. To work as Brent, everything, all everything goes up for us as well. So we want a pathway for. We want to be on the right side of Mr. history and a History and the right side of history is ending this bad part of History which we call slave wages that dated all the way back to the Pullman Porters with. They just had a parade and Labor Day and so we are labor workers with no Union but we're still workers here serving every time you come to the restaurant, every time you go to Applebee's, every time you go to Original House of Pancakes, we are there to serve you and so we deserve this race is a hard fight to fight that no other industry has to fight for a raise, but we have to go through all this led the station to get our race. My name is Terry Evans on the proud owner of Windy City, ribs and windy city, ribs and whiskey. I met this organization in 2018 and it was at that time that I met siroo. And she had the book for and I was it was brought to my attention as of as a new person entering the food industry has been 17 years in Corporate America. So I was blown away when I walked into the kitchen and realize that people had worked in this industry for decades and no saving it. So it took it, it's it's Call my cell. Myself to kind of educate myself on what was going on with this waste system in the food industry. And I was like how people show up for work. And he's hot kitchen, and these environments hours after hours and have nothing to show her for their family, beyond the wages that they get, and they're struggling to pay their bills. And so, I rip the Band-Aid off. It was difficult, it was hard, I went through training, Mikey and Itachi, the team Illustrated to me how to do this, how to make this make sense. And a lot of the restaurants here will say this is impossible. Well, I've done it and I've been able to scale while doing it. So it is possible and it's about numbers. It's about knowing The Narrative of your number. I have an MBA from Northwestern. So I'm the first person to tell you that profits have to make sense for me to be in business and it's been tough, It's been a challenge. But, do I go to sleep better at night? Because I can feed the people that are working for me everyday. that's, That's why. That's what this is about. I'm a third-generation, my great-grandfather, so whiskey and land as a free slaves, to be able to take his family and to be able to give them the Financial Freedom that we have. So, how could I do this as a black woman? Not take it upon myself, to figure out how to take care of the people that come to work for me everyday. So I just asked for you to have some compassion to think about the people. When you walk out of here and go have lunch, how are they feeding their family? How are they paying their bills? Do you? Do you watch? do you want your people that are Do you want your people that are feeding you is serving? You not to be able to pay their phone bill. Like that doesn't sit well for me when I get in my car, I can go and pay for gas. But a lot of the people that are showing up to go to work in these restaurants, can I still think about that? I just I want you to just have some compassion for the people that are going to work every day in these industries that are showing up for us. Let's show up for them and do the right thing.
